You’ve seen the finished plate. The chef jacket. The restaurants. The hotels. The private dinners. The photos that make it all look effortless.
You haven’t seen what it took to get there.
For more than 20 years, I’ve lived a huge part of my life inside hospitality. And I’ve got stories.
Some will make you laugh. Some will probably make a few people uncomfortable. Some are difficult to write. And some will make you think, there is no way that actually happened.
This diary isn’t about settling scores. It’s about telling the side of this industry — and my life — that normally stays behind closed doors.
The brilliant customers. The absolute nightmares. The chefs who became brothers. The people I trusted who weren’t what I thought they were. The jobs I lost. The times I started again. The pressure, the money, the mistakes, the ridiculous situations private chefs end up in.
And the moments outside the kitchen that changed the person wearing the jacket.
Because being a chef is only part of my story.
